After looking through all of the delicious recipes submitted in our ‘Best Recipe’ contest, We couldn’t wait to try them out on our own.
Today, we’ll be sharing the first winning #EatWell recipe: Prawn Noodles. Tasty and well-loved, Prawn Noodles is a dish many Singaporeans are willing to queue at the hawker centre for. This recipe is courtesy of @blurry.yck, who considers Prawn Noodles one of her favourite local food. She also believes that a lot of effort has to be put into a good broth, but the resulting taste would make it all worthwhile.
Here’s how you can skip the queue by making your own Prawn Noodles at home.
What You’ll Need
Ingredients
- Prawns
- Pork loin (sliced)
- Fish cake (sliced)
- Crab sticks (optional)
- Fishballs (optional)
- Vegetables (spinach or lettuce)
- Beansprouts
- Preferred type of noodle
Prawn Broth Ingredients
- 1kg of prawn heads (and shells if you like)
- 1 piece of sliced ginger (about 3cm)
- 6 cloves garlic (smashed)
- 1.5 litres of hot water
Let’s Start Making Prawn Noodles
Step 1 - Heat the vegetable oil in a wok. Add ginger and garlic, and stir-fry for 2 minutes or until fragrant.
Step 2 - Add the prawn heads and stir. Use the spatula to squeeze the prawn heads and extract the flavorful bits.
Step 3 - Add water and bring it to a boil. Allow it simmer for 20 mins after.
Step 4 - Pour the soup through a sieve to remove the heads and other bits.
Step 5 - Add prawns, pork loin, fish cake, crab sticks, and fish balls into the soup for more flavour. Remove the ingredients once cooked.
Step 6 - Season with soy sauce, salt, sugar, and pepper according to preferred taste.
Step 7 - Boil noodles, vegetables, and beansprouts in a separate pot.
Step 8 - Pour prawn broth over boiled ingredients. Add toppings and serve immediately.
