For the last winning entry from our ‘Best Recipe’ contest, we’re spicing things up with a flavourful Chicken and Mixed Vegetables Curry recipe! Whether you prefer brown rice or bread as your staple, this is a dish that can complement either one at any time of the day. 

If you’re someone who is unable to take spicy food, we’ve got great news for you! In this recipe feature, we’ll be sharing Jeng Hui’s ‘non-spicy’ and ‘healthier’ version of this dynamic Indian fare. Here’s how you do it:

Ingredients

  1. 1 Piece of Chicken Breast (cut into cubes)
  2. 3 Stalks of Ladies' fingers (or okra) (cut in halves)
  3. 1 Tomato (cut into 4)
  4. 2 Stalks of Eggplants (sliced)
  5. ½ of a cabbage
  6. 2 Long Beans (diced)
  7. ½ of a potato (diced)
  8. 3 Tablespoons of Curry Paste
  9. 1 Tablespoon of Prawn Noodle Paste
  10. 1 Tablespoon of Thai Red Curry Paste
  11. 1 Teaspoon of Curry Powder
  12. 1 Tablespoon of Tom Yam Paste
  13. 1 Cup of Curry Leaves
  14. 1 Stalk of Lemongrass
  15. 1 Piece of Onion (diced into tiny pieces)
  16. 5 Pieces of Garlic (diced into tiny pieces)
  17. 4 Slices of Ginger
  18. 50ml of Fresh Milk
  19. 1 Creamy Yogurt Drink
  20. 600ml of Water

Let’s Start Making Chicken and Mixed Vegetables Curry

Step 1 - Add five tablespoons of oil into a wok and heat it. Add the diced onions, garlic, gingers, as well as an inch worth of lemongrass, and fry them until the ingredients turn golden brown.

Step 2 - Add curry paste, prawn noodle paste, red curry paste, curry powder, tom yam paste, curry leaves, and the rest of the lemongrass. Heat it up until the curry smell becomes more pronounced.

Step 3 - Add cabbages, long beans, and potatoes, and pour in 600ml of water. Let it boil for 5 minutes.

Step 4 - Add tomatoes, ladies' fingers, and eggplants, and let it boil for another 5 minutes.

Step 5 - Pour in 50ml of fresh milk and the yoghurt drink. Let it boil for another 5 minutes and serve.
