“Cooking with Care” is a series presented by the Agency for Integrated Care (AIC) that shares recipes of everyday local dishes made friendly for seniors’ diets. Think healthier carbohydrates with that same great taste, or using a lower-sodium alternative for a well-rounded nutritious meal.
We believe that cooking for our senior loved ones is not only a way to show them how much we care, but also to create and revisit beautiful memories together. So, let’s put on our aprons and get cooking!
Chickpea Curry
Serves 2-3
Ingredients A:
400g canned chickpeas
1tbsp vegetable cooking oil
1 onion, julienne
1 tomato, wedges
2 shallots, chopped
½ tbsp minced garlic
100ml stock
½ tsp low sodium salt
Ingredients B:
½ tsp turmeric powder
1tsp chilli powder
1tsp paprika powder
1tsp cumin powder
½ tsp garam masala powder
Method
- Heat cooking oil in a pan at low-medium heat and sauté minced garlic, shallots, and onion until aromatic.
- Add tomato and stir-fry well.
- Add in chilli powder, garam masala powder, cumin seed powder, turmeric powder, paprika powder.
- Add 50ml of water, small amounts at a time to create a roux-like texture.
- Add small amounts (about 2tbsp) of chickpea liquid to create the preferred consistency.
- When the curry starts boiling, add in chickpeas and stock.
- Reduce to low heat and allow to simmer for 15 mins.
- Garnish and serve.
Tip: Protein supports the growth of our hair, nails, bones and muscles. Choose low-fat protein such as lean meats, fish, chicken without skin, etc. Vegetarians can turn to peas, beans, lentils and eggs for their protein intake.
