Rice Cooker Chicken Rice 

Serves 3-4

Ingredients

Chicken marinade:
4 Boneless Skinless Chicken Breast 
3 stalks spring onions (cut into 5 cm)
1 tbsp minced garlic
1 tbsp grated ginger
1 tsp low sodium salt
1 tbsp sesame oil

Rice:
300g brown rice
350ml chicken stock (adjust to the type of rice)
30g sliced ginger
1 bulb garlic (cut into half)
3 stalks spring onions (cut into halves)
Salt to taste (optional)
8 heads of bok choy (blanched with boiling water)

Sauce for chicken:
2 tbsp light soy sauce
2 tbsp hot water

Method

  1. Marinate chicken breast with ginger, garlic, sesame oil, spring onions and low-sodium salt and set aside in the refrigerator (preferably overnight).
  2. Fry the aromatics (garlic, ginger and spring onions) to release the aroma.
  3. Add the rice, chicken stock, and the aromatics into the rice cooker.
  4. Turn on the rice cooker for 15mins then add in the marinated chicken and cook for another 30 - 45mins.
  5. Scoop out the chicken and other aromatics from the rice cooker and scoop the rice.
  6. Mix the light soy sauce and hot water to make the sauce.
  7. Drizzle the sauce over the chicken, garnish with bok choy and serve. 

Tip: Brown rice was used in this recipe instead of white rice. But is white rice bad for you? No, when eaten in moderation. Choosing brown rice can improve our overall health but having white rice occasionally is fine too!
